Junior Sous Chef- Pastry 饼房初级副厨师长
Primary Responsibilities主要职责
Reporting to the Pastry Sous Chef, responsibilities and essential job functions include but are not limited to the following:
• Consistently offer professional, friendly and proactive guest service while supporting fellow colleagues
• Assist his Executive Pastry Chef and outlet chefs in the planning of activities, promotions, menu implementations according to the annual plans.
• Attend meetings in absence of his Executive Pastry Chef and ensure that all designated action points from daily chef briefings or monthly operational meetings are being followed by the individuals concerned.
• Responsible for upholding all standards and daily operations of his Bakery in conjunction with his Executive Pastry Chef. Resume leadership role in the absence of his Executive Pastry Chef.
• Co-ordinate and supervise menu implementations in a timely manner with necessary standards set, recipes, food pictures and costing completed prior to implementation
• Create and develop new breads and bakery items together with his Executive Pastry Chef, by keeping up with the latest market trends.
• Ensure disciplinary and grievance procedures are properly adhered to, following hotel policy and recorded accordingly.
• Handle customer comments and complaints and take swift corrective action to resolve issues to the customer’s satisfaction.
• Ensure the food cost of his Bakery is in line with budget as well as kitchen operating supplies, and kitchen energy costs.
• Prepare and control of daily and weekly market lists.
• Ensure consistent quality of all food stuffs purchased, monitoring quality at receiving point, ensuring value of purchases matching to correct food costs.
• Do not entertain unannounced visits from food or material suppliers. All outside company representatives must conduct business through the chef’s office only
• Constantly strive to reduce energy consumption through awareness, and monitoring usage of ovens.
• Conduct weekly inspections and walk through of all kitchens, together with Engineering & Stewarding Departments, monitoring maintenance and ensuring good working order of operating equipments, and clean hygienic kitchen with documented follow-ups.
• Monitor cleanliness and hygiene of the Bakery with the stewarding department and lead HACCP program together with Hygiene Officer
• Be understanding of the labor budget of the kitchen department.
• Ensure that all employees report for duty in the Bakery with correct uniform in a timely manner
• Ensure adherence to Fairmont’s Code of Ethics
• Support Hotel Committees
• Support Service Plus Recognition Program
• Ensure Employee engagement Survey Goals are met
• Ensure grooming standards are met
• Perform any tasks as assigned by the Management
• Other duties as assigned

• 计划、统筹和督促菜单及时的执行, 并保证菜单在执行前已具备必要的摆放标准、食谱、食物的照片和成本核算等信息。
• 根据市场最新发展趋势协助厨师长创新和发展新的面包和烘烤类制品。
• 根据酒店的相关规定正确处理任何违纪行为。
• 处理顾客的评价和投诉, 迅速改正以确保顾客满意。
• 负责维持面包房的食品成本、工作所需的材料、厨房能量消耗和预算一致。
• 准备及控制每天和每周的市场供货清单。
• 确保采购的食品质量, 在收货时监督质量, 确保采购的食品价值和食物成本一致。
• 不允许接待任何未经通知的食品或材料供应商。 所有外界的公司代表只允许直接跟厨师办公室联络业务。
• 努力坚持减少能源消耗, 监督烤箱的使用。
• 每周一次检查, 和工程部、管事部一次巡视面包房, 监督维护和保证工作仪器是良好运转的, 厨房卫生是干净的。
• 监督管事部负责区域的卫生清洁, 和卫生监督员一起执行HACCP。
• 了解厨房部门的人员计划。
• 确保所有工作人员按时着制服上岗。

Knowledge and Experience知识和经验
• Extensive leadership experience in a Pastry department required
• Diploma Certification in a Culinary discipline required
• Working knowledge of sugar work/chocolate skills an asset
• Computer literate in Microsoft Window applications an asset
• Strong interpersonal and problem solving abilities
• Highly responsible & reliable
• Ability to work well under pressure in a fast paced environment
• Ability to work cohesively as part of a team
• Ability to focus attention on guest needs, remaining calm and courteous at all times
