Scope of Position
The Banquet Captain is responsible for, but not limited to, the overall management oin Banquet.
To provide back up for the Manager and offer support in ensuring that the highest standards of service are offered to our guests.
Requirements
Have a minimum of 2 years experience in a luxury establishment
Have a keen interest in food and the culinary ambitions of the establishment.
Willing to work a flexible schedule and holidays.
Work in a safe, prudent and organized manner
Have an in-depth knowledge of food and preparation
Have a good knowledge of wine and beverages
Be able to relate to all levels of guests and management
Have the ability to handle multiple tasks at one time
Have excellent communication and organization skills
Be able to consistently delight and satisfy our guest
Have the ability to handle guest requests in a detailed manner
Reading, writing and oral proficiency in the English and local language
Professional appearance and demeanor at all times
Have mathematical skills, computer software aptitude (as required) and some hotel operation knowledge

Responsible for the service of all catering food and
beverage. Direct all catering service efforts toward guest satisfaction, the
achievement/maintenance of division stands, and profit maximization.

Maintain organization of meetings
and events service areas.

Review menu/service (Event Order)
with Meetings and Events Operations Manager and Banquet Chef on a daily basis.

Communicate any additional
set-up requirements with head houseman and meetings and events operations
manager.

Coordinate all food requirements
with the kitchen, including accurate counts for preparation and plating.

Coordinate all liquor
requirements with the beverage manager. Be responsible for maintaining budgeted
meeting and events beverage cost.

Assign work/functions to
captains.

Directly supervise the work of meeting
and events supervisor and servers and personally observe the performance of all
catering service colleague.

Directly responsible for the
grooming standards and appearance of all catering service colleague.

Insure that all schedule
catering functions take place on time and according to plan.

Make personal contact with
guests an assist them with any requests.

Supervise proper tabulation of
all meeting and events checks and be responsible for insuring that all checks
are presented to guest for signature.

Prepare or review a critique
made of every catering function. All problem areas should be noted and either
corrected or a proposed solution should be forwarded to the Meetings and Events
Operations Manager.

Conduct “pre-function briefings”
and attend weekly function meetings.

Keep copies of all banquet event
order’s, along with beverage requisitions.

Responsible for control and
maintenance of all service equipment. Write work orders as necessary.

Bring to the attention of the
director of catering all materials and equipment that require re-ordering or
need to be replaced.

Recommend new products and/or
methods of operation.

initial training of all catering service colleague.

Insure that all guest
complaints/requests are handled to the guest’s satisfaction.

Responsible for reporting all
guest and colleague accidents immediately to the Meeting and Events Operation
Manager so that accident reports may be prepared/further assistance may be
obtained.

Responsible for maintaining
ongoing energy conservation and loss prevention programs among service colleague.

Perform any duties assigned by
the Management deemed necessary.

REQUIREMENTS 职位要求

Minimum
vocational school.
