    Duties & Responsibilities: To ensure that all Food & Beverage Outlets and Kitchens comply with local and Sheraton laws on Sanitation and hygiene. Food & Beverage Department 1.1. Organise Equipment for Food Preparation • Oversee the preparation of kitchen equipment for use • Oversee the equipment needed for Food production for menu items 1.2. Assist in the Presentation of Food • Oversee and Assist the kitchen associates when needed in the   preparation of food for service • Oversee portioning and plating of food when needed 1.3. Receive and Store Goods • Manage the receiving and storage of kitchen goods • Keep control of all china, glassware, flatware and hollowware, and conduct regular quantity stock take 1.4. Clean and Maintain Equipment and Premises • Oversee the cleaning and storage of kitchen equipment • Oversee the cleaning of the premises • Oversee the removal of waste • Maintaining superior conditions of all equipment in the department. Ensuring that silverware is polished / burnished on a regular basis. 1.5. Maintain Hygienic Standards and Practices • Ensure all the staff to carry out tasks according to the SOP • Liaise with the Local Hygiene authorities and be up-to-date with the Hygiene laws • Conduct Hygiene and chemical usage training • Maintain hygienic kitchen and outlet areas • Clean the kitchen and  service equipment • Monitor and Maintain Sanitation & hygiene • Keep all china, glassware, flatware and hollowware, in a hygienic and clean condition. 2. Take part in Strategic Planning and Development • Take part in the preparation and planning and department/unit/outlet goals and objectives • Take part in the planning rostering of Staff in all areas as per the business needs. • Analyze sales and marketing data in relation to the department • Participate in the preparation of strategic plans and operation plans. • Determining a purchasing plan, according to the financial budget of the outlet. • Determining optimum staffing, product, stock and equipment levels, in relation to business needs, keeping in mind the various seasonal periods of business. 2.2.  Assist with the development of new products and services 2.3. Consider Economic/Political Social Issues Relevant to the Department • Interpret economic data and take into account external economic issues when planning and making decisions • Anticipate economic business level fluctuations • Monitor information and trends in the industry 2.4.     Job description ● Ensure all areas of Sodexo @ Google business are compliant with HSE policies, procedures and process ● Oversee the tracking and monitoring of HSE performance metrics and manage all HSE reporting, timely reporting on Monthly reports, Vendor quality feedback, QBD. ● Develop strategies to drive the overall safety program onsite; promote and develop a positive Health and Safety culture at a l levels throughout the account by engaging mindful See Care Share philosophy. ● Maintain the day-to-day HSE operations for site including management of the safety ambassadors for the business; ● Implement programs for reducing FSIR & LTIR and facilitation and monitoring – GAP Closures as per the HSE audits scheduled ● Lead HSE standards to prevent accidents, incidents and events that could harm employees and/or property of clients. ● Consult with business teams to work collaboratively to implement best practice workplace health and safety, food safety and environmental standards and procedures within the business; ● Work together and coach leadership team to demonstrate positive leadership behaviors in all areas of HSE and to implement the company HSE practices programme to improve performance; ● Establish and maintain processes for identifying, assessing, managing and recording HSE risks and controls and demonstrate competency in current and emerging threats to HSE including the management of the risk assessment program for unit; ● Manage and assist in the investigation of incidents to drive a rigorous approach to root cause identification and close out of corrective actions. For major incidents lead the investigation process; ● Ensuring activities like staff medicals, external calibration of equipment , external lab analysis , HSE workshop & Hazard hunt conducted as per the timelines ● Contribute to ongoing HSE systems improvement which drive improved understanding and compliance to HSE management tools and procedures; ● Review and assist in the development of generic SOPs/PWIs where appropriate; ● Undertake Behavioral Based Safety Observations to drive risk awareness and care with employees and leaders, and record using iAuditor process as a minimum when at site; ● Monitor the implementation and compliance to the HSE program and procedures to ensure that there are appropriate and effective mechanisms in place to eliminate breaches of the HSE program and to reduce the LTIFR accordingly; ● Update and maintain in conjunction with Sodexo HSE, the legal knowledge required for business compliance to food safety and security legislations, standards, codes and practices; ● Lead or develop all necessary HSE trainings for Sodexo at Google on-site employees; ● Any other duties as required from time-to-time.     Duties & Responsibilities: Ensure the whole F&B Department and associates offer a outstanding service to the guests. Provide a strong communication link between Outlet Managers and the Director F&B. Services: 1. Ensure that services are carried out in accordance with hotel standards 2. Ensure all the associates carry out the tasks according to the S&P. 3. Focus on customer service and associate development needs in all outlets 4. Supervises the quality of service in all outlets during meal periods. Training: 5. Recruitment, training, development and rostering of associates. 6. Provide training support to all outlet managers. 7. Should be a motivated trainer and willing to train. Standard and Procedure: 8. Ensure all the associates carry out the task according to the SOP. 9. Assist Director of F&B in developing, updating SOP. Planning: 10. Assist Director of F&B in sourcing local suppliers for equipment or other requirements in the department. Menu knowledge: 11. Good beverage knowledge / good knowledge of beverage service skills / good menu and food knowledge. Management and Communication: 12. The incumbent is responsible, to ensure that F&B Department is run efficiently and that he/she apply all managerial principles to ensure Guest Satisfaction and financial benefits to the owners, in accordance with the budgeted guidelines and S&P. 13. The incumbent should be able to work without supervision and be able to take on the duties of Director F&B, in his absence. 14. Coordination with other departments, i.e.: Engineering, House Keeping, Sales & Marketing, etc. 15. Assist outlet managers in associate counseling. 16. Actively involved in assisting Banquet Manager in execution of important functions. The incumbent should provide creative support to the Banquet Manager. 17. Interact with guests in all outlets, in order to enhance their dining experience and build relationships. Meeting: 18. Attend F&B Meetings and conduct the same in the absence of Director of F&B. 19. Attend associate briefings in all Outlets and Bars. 20. Coordinates with Director of F&B on details of day to day functions. 21. Coordinate day-to-day operations with the Outlet Managers. Cost Control: 22. Determining optimum associating, product, stock and equipment levels, in relation to business needs, keeping in mind the various seasonal periods of business. 23. Good knowledge of P.O.S system. Hygiene and Grooming: 24. Monitoring associate grooming and associate hygiene. Reviewing the same during associate briefings. Marketing Survey: 25. Sales & Marketing focus, in developing Food & Beverage promotions in outlets, coordinating guests feedback, analysis of guests feed back and altering the strategy to the guests needs.  Competitive analysis should be accomplished at least once a fortnight, with a view of differentiating our product and therefore increasing our market share. Computing: 26. Computer literacy, including spreadsheet software Certificate: 27. Good understanding of SOFT SKILL, MFT, TSW and management skill. General: 28. Collection and analysis of financial data to assist in decision-making. 29. Assist the Director of F&B and Outlet Manager on giving creative suggestions. 30. Provide support to Stewarding manager. 31. Assist outlets during their peak period of service. 32. Assist the Director of F&B in planning, Organizing and execution of special events and food promotions. 33. Keep abreast with latest developments and technology in the F&B industry 34. Assist Director of F&B in souring appropriate entertainment for various outlets as required Experience: Technical course in F&B management (minimum 3years, Full-time course). Experience as outlet manager for 4-5 years in a 5 Star Hotel. Experience in similar position for a minimum 2 years, in another 5 Star hotel.
